This is a project born from passion, not born from inheriting vineyards or a cellar. Nelly France is from Brittany (France), Arnaud De Boel is from Belgium, and they met in 2009 in New Zealand where their love for food and wine brought them together and quickly found a love for one another. With their two young children Augustin and Margot, the family chooses biodynamic farming and winemaking, and owns vineyards in the Northern Rhone where they live (in Saint Joseph and Cornas), and some land in the Southern Rhone close to the villages of Suze-la-Rousse and Sainte-Cécile-les-Vignes. They are completely dedicated to the celebration of how food and wine come together in so many magical occasions, and strive to make wine that is meant for the table, meant to enjoy with friends and family, and meant for all of the Bon Vivants of the world; something they can pass on hopefully for generations to come.

Tech Sheet

//cdn.shopify.com/s/files/1/0727/8755/8673/files/DBF_Voraces_b41def5b-917e-47aa-9195-f35702a7bf1a.jpg?v=1744045467
flavia-pre-phylloxera-etna-rosso-2015-750-ml
Flavia Pre-Phylloxera Etna Rosso 2015 (750 ml)

Flavia Rallo and her team have won the Silver Medal at the prestigious Concours Mondial de Bruxelles for her inspirational Prephylloxera Etna Rosso 2015.

This is a magical blend of ungrafted Nerello Mascalese (80%) and Nerello Cappuccio (20%). Imagine if Burgundy was planted on the side of a volcano. it’s the grape varieties that top the bill. Which makes sense, given that they also bear the appellations of the region and that blends aren’t part of the local culture. Does this mean then that the characters of wines from this part of France are defined by its grape varieties alone? That the terroir is irrelevant? Merely a perfectly neutral, silent substrate? Of course not, that would be a very simplistic view! Especially since it would dismissing another important point: Alsace is a great vineyard of terroirs and a vineyard of great terroirs.

51 Grands crus

The Alsace wine-making region has a rather “Chilean” profile, being 120 km (75 miles) from north to south and just a few kilometers from east to west. It is distinguished not only by the charming villages that line its Wine Route, but by its lively and complex geology. So much so that over time, generations of winemakers have identified and ranked some particularly remarkable terroirs. Some are classified as lieux-dits (named plots), and the most exceptional have been elevated to Grand cru status.
There are exactly 51 of them, all with distinct profiles. Some fifteen geological families have been identified, including granite, clay, sandstone, schist, and limestone. Generally located at an altitude of between 200 and 400 meters (between 656 and 1312 feet), the Grands crus, often quite steep, benefit from distinguishing soils as well as exposures and micro-climates that promote slow, consistent grape maturation, which is the reason for the very finely expressed aromas of the wines.

Great diversity

The reason for identifying different areas in this way becomes obvious as soon you taste wines of the same grape variety from two different terroirs. Riesling, for example, is easily recognizable on tasting, but also has a reputation for being a fine indicator of terroir. There’s a world of difference between the bold generosity of a Riesling from the Kaefferkopf Grand cru and the calm intensity, characterized by cleanness and salinity, of the same grape from the very volcanic Rangen Grand cru. More than in some other wine regions, the vineyards of many Alsatian estates are quite parceled up. Which can be quite constraining day to day, especially during the harvest, but is a real boon when it comes to the diversity of wines they can offer. So as you can imagine, great connoisseurs of Alsace wines don’t stop with “I like Riesling” or “I don’t like Gewurztraminer”… When they talk about their preferences, they describe the details of each terroir with relish. Why not do the same?

In past lives Jerôme François was both a carpenter and sommelier. The result shows classic black and red fruits on the nose, as well as pork fat and peppercorns, while the palate follows with a deep core of minerality, ripe and fresh fruit, and is lined with spicy acidity.

Famille de Boel France is a small family estate owned and run by an enthusiastci and inspired husband/wife team in the high elevations of Saint Joseph. A blend of Graciano and Tempranillo, the grapes are fermented with only ambient yeasts in stainless steel tanks, before a rest for about six months in the same vessels. The wine naturally clarifies and is not filtered nor sees any additions of sulfur before bottling, and is then released as a fresh expression of this blend. The expressive result has a vibrant nose of red fruits, spice, and hints of licorice, while leading to a soft and supple palate of plums, cherries, light herbs, and pepper. This northwestern Spanish red is perfect drinking wine for many foods, as the fresh acidity and soft yet bright fruit is very complementary at the table.

Ronsel do Sil is situated in one of the world’s most extreme grape growing regions, the Ribeira Sacra DO of northwestern Spain. With vineyards planted throughout treacherously steep slopes (ranging from 300 to 700 meters above sea level), all pruning, maintenance, and harvest is carried out by hand on old terraces built by the ancient Romans called Bancales. Maria José Yravedra is an absolute visionary for the region, producing wines that not only show incredible varietal integrity, but she accomplishes this through natural farming and biodynamic principles, making around 45,000 bottles a year from their 10 hectare estate. Her philosophy is based on what she calls ‘heroic’ viticulture, reflecting a sincere balance with nature, through love and compromise with the land. Aside from composting each year with gorse (the last harvest’s prunings and remains), sheep graze the vineyards once a year to add their natural flare and keep excess plants at bay. In the cellar, an absolutely minimal approach is the secret to each perfect bottling, with a gravity flow system instead of pumps, all old wood and concrete use for aging, and very little sulfur additions, letting the native grapes of the area tell their individual story.

Tech Sheet

//cdn.shopify.com/s/files/1/0727/8755/8673/files/RonseldoSilVel_uveyraMencia_7fab291e-e415-4b0c-bbf9-c74dc14f3085.png?v=1697067602
de-boel-france-les-voraces-rouge-2023-750-ml
De Boel France 'Les Voraces' Rouge 2023 (750 ml)

100% Syrah

Fermentation: Stainless steel, Indigenous yeast

ABV: 12.2%

Biodynamic

‘Les Voraces’ was a revolutionary group from Lyon in 1846 that would travel from canteens to taverns with the claim to lower the price of wine – everywhere they went loudly showing their love for food & wine!

‘Les Voraces’ is a pure expression of Syrah from the northern Rhone in the Collines Rhodaniennes IGP, where only stainless steel is used for fermentation, and a short aging to give as much varietal characteristic as possible. This young vineyard is hand-harvested when the fruit has reached a perfect balance between pH and sugar development, and brought in for a natural fermentation. Being a mono-varietal Syrah and not a blend, this mix of estate fruit is from both the commune of St. Jean de Muzols (young vines) and Tournon (a vineyard of about fifty years). Half of the wine remains in tank, and the other half is placed into old French barrique for about a year until it is bottled. The grapes were fermented primarily as whole clusters for about 12 days in stainless steel before they were gently pressed and then finished their natural fermentation and aging for 6 months in 400L Amphora, 3,000L concrete vats, and 500L 3-5year old barrels. The vessels and grapes were then blended together in stainless steel to mingle and naturally settle for another 4 months before bottling. The resulting wine is refined, elegant, and so bright. Aromas of spice, fresh brambly berries, and fennel-heavy licorice lead to a balanced and soft palate of mountain blueberries, rose pedals, and earth, all wrapping into a long and complex finish.

Can’ Leandro is a passion project between two brothers that wanted to restore their family heritage and begin a winery. Alberto and Gabriel Sanchis began in 2013 with the goal to bring the local terroir and local (and some forgotten) grapes together, in harmony with the environment, to make a winery that offers a taste of their home. Gabriel studied design before he made a giant career shift and began his life in oenology. He not only makes the wine from start to finish, but also is responsible for the clean yet beautifully crafted labels of the estate. Almost to the point of obsession, they have focused and repaired old vineyards with nearly extinct varieties in order to bring them back from the grave. Merseguera (a white grape) and Bonicaire (red) are of utmost importance to their farm, alongside the local Monastrell in order to make a small range of wines that are farmed as naturally as possible, and made with a soft hand. Can’ Leandro gives the best this region has to offer, being close to the Mediterranean but with higher elevations, poor sandy soils and ancient limestone, and a climate that gives personality and style to what lands in the glass.

Tech Sheet

100% Merlot
Fermentation Stainless steel, Indigenous yeasts
Aging Varies
ABV 13.5%
Farming Methods Organic certified & Biodynamic (not cert)

The Echappée Bel Rosé is a truly unique rosé, arguably the only one of its kind. Olivier sources Merlot from a trusted farmer who has a plot of Grand Cru vines in St. Emilion specifically for this rosé. The grapes are hand-harvested before the sugars become too high and brought to the cellar for a natural start to fermentation in stainless steel. After only one day, the grapes are pressed, giving the wine a gorgeous kiss of color, and then moved into 6-year-old Allier 600-liter barrels to continue fermenting. The wood imparts interesting aromas and tannins to the finished wine, which completes its fermentation after approximately 15 days. The wine is never vintage dated, which is brilliant because good rosé should be enjoyed for a couple of years and not just immediately after harvest. Although it is always single vintage, there is no obsessing over its "correct" vintage. The aromatics are very pretty, full of soft berries, red plums, a hint of wood, and cherry cordial. Small strawberries explode in the mouth, and the balanced acidity adds to the texture of the wine with a long and delicious finish.

Biodynamics is truly a new adventure where our conception of the rational and the explicable must evolve and expand towards other influences, those of the cosmos of course, but also by considering that everything around us is alive and communicated. - Olivier

(Our project) Is the sum of a thousand tiny details that, with the Dordogne river, ‘flows beautifully’ before our eyes, offering us every hour a new light and radiance

Chateau de Bel is the idyllic estate that houses the visionary project and wines of ‘Vins Olivier Cazenave.’ Olivier and his wife Anne married in 2003, the same year they embarked on their lifelong dream of buying a rustic piece of property and a home on the picturesque edge of the Dordogne River, with a promise to create an estate and wines that are truly distinct from others. As the vintages pass, Jeff’s participation has been able to lessen, and soon his name won’t appear anymore as Olivier has begun to master his own art. Inspired by Burgundy, this wine is all about discovering the terroir of Bordeaux through Merlot; hand-harvest, no wood, only vats. The first ripe fruit comes in, destemmed and crushed, and begins fermentation. Once the rest of the crop has ripe stalks, the best fruit is selected to join in full clusters. 100% Carbonic ensues and when finished, is punched down to reveal this unique expression of Merlot to go and finish aging in tank. After about 8 days of skin time, the grapes were pressed and put back in the vats to continue, as well as to complete malolactic fermentation. The wine rested there for 8 months, naturally clarifying and seeing no filtration before bottling. Only a touch of sulfites were used after malo and before bottling, resulting in a very expressive and raw version of the grapes. Over the last 40 years, the dedication to the earth and very low environmental impact wines has remained steady, while the estate has grown close to 11 hectares of vines, that are spread between Piobesi, Guarene, and the famous La Morra, to produce around 50,000 bottles a year. The range of ‘Uva e Mani’ (Grapes and Hands) is dedicated to the passions and artistic love of different Buganza family members, while also paying homage to their soft and artistic touch with each wine. He named every plant he ever found, and this wine is built in his honor - a bright and fresh representation of the Dolcetto grape, while remaining true to the structure and natural grip of this Italian variety. The fruit went through natural fermentation in stainless steel tanks and finished in only 6 days, and then completed malolactic there as well. A rest over the winter in tank to help naturally clarify lasted for about 4 months before being bottled without filtration and only a small amount of sulfites used. The result is vibrant and alive with fresh purple fruit, brambly spice, and the gorgeous aromatics of the countryside. The fine lees were stirred often to give great texture to the wine, and since Grenache Blanc does not have naturally high acidity, after fermentation finished, the wine was placed outside for the winter (with one racking after about two weeks), preventing malolactic fermentation to take place, and retaining as much freshness as possible in the finished wine. After a second racking in February, and a dose of SO2, the wine was bottled in March for an April release. Their utter commitment to the harmony of their project is truly spectacular, as they seek balance between their crops, the environment, their people, and their economy, being ‘aware of the feet on the ground and the divine in heaven.’ Certified organic (since 1997) in their entire production (about 25 hectares of grapes, and 120 hectares of olives); conscious and practicing the benefits of zero additives to wine and minimal additions of sulfur; avoiding all international varietals and only focusing on the local indigenous grapes (where Tourgia Nacional in this area shows an intense floral component from the unique shale soils); Romeu is making some of the cleanest and most beautiful dry reds that we have found in Portugal.

Tech Sheet (2020)

Varietal 100% Grenache
AVA Santa Barbara County
Vineyard Santa Barbara County
Élevage 11 months in neutral french barrique & puncheon.
Bottling date September 5th, 2025
Alcohol 14.3% abv
Finishing pH 3.63
Total Production 1548 Cases
Farming Practicing Organic
Tasting Notes Hinoki, Sweetgrass, Finley Farms Strawberries, Vetyver, Rose Oud.

Celebrating twelve vintages of the beauty we call Tuesday night grace, via three gorgeous corners of Santa Barbara County. The vineyard (with the same name) is less than one hectare with a northern exposure, and very poor weathered granite including a high percentage of silt, and very little organic matter. Work with horses in the vines, hard work by hand through to the harvest, and a very particular selection in the cellar, and then the added magic begins. The grapes remain in whole clusters and ferment naturally in 500-liter wooden vats (about 7 days for alcoholic fermentation is all, and 2 months for malo), and then are pressed after 50 days. During the fermentation, only a watering can full of the wine is used to do ‘pump overs’, and the free run juice and the lightly pressed juice are combined to age in both 500 and 700-liter old used French barrels. After a year, the wine is lightly filtered and then bottled, ready for its long evolution and then exposure to the world. Fresh and light in the glass, the nose is intoxicating, full of dried rose, stony earth, mountain berries, and layered spice. A velvet glove wrapped around an iron fist, gorgeous in the mouth, and offering a general balance of finesse with deep layers of fruit and terroir. This region still only carries the D.O. status of Vinos de Madrid, but has a unique and remarkable history of its own, with very old and deep soils of sand and gravel that are chock full of quartz and silica. This coupled with a cooler mountain climate with an elevation of 600 and 1100 meters, Gredos is all about the resurgence and rediscovery of this incredible terroir for primarily Garnacha, and Albillo Real. The naturally low yields of these unique vineyards clearly require special attention, with only organic work done by hand, and letting the natural beauty and character of the grapes showcase themselves with natural fermentations and very little intervention in the winery.

<a rel="noopener" title="De Boel France 'Le gras c'est la vie!' A fortyyear-old vineyard of Caladoc (a cross between Malbec and Grenache) was hand-harvested and then directly pressed from whole clusters for a natural fermentation in stainless steel vats. In the early spring, the wine is bottled and has a gorgeous pale pink color, and shoots forth brilliant aromas of young strawberries, white flowers, and mineral. The grapes come into the cellar and go into the press but stay on in clusters for about 8 hours until pressed off. The wine then undergoes natural fermentation but does not go through malolactic fermentation after a rough filtering, in order to retain the incredible minerality the area provides its wines with. In 2024, the season made for an incredibly complex vintage of white wine. Although warm and long, there was still plenty of acidity to stay in the grapes, but it was a vintage that gave more intensity and complexity to the finished wine, with salty freshness and clear minerality. This beautifully textured wine has scents and flavors of flowers, green apple, exotic fruits, and honey, and leads to a pronounced and stoney mineral edge that lingers on the finish. This lovely fresh white lends itself to pair ideally with cheeses, vegetables, and fish.

Azienda Agricola Petrera Pasquale has been making wine in the Gioia del Colle region since the late 1800’s. Like many wineries in the area, bottling wine came very late to the game, and 5 generations later, the first bottles of ‘Fatalone’ were produced in 1987. A winery with intense dedication to the earth, their organic farming practices prove to make exceptional Primitivo Gioia del Colle on many different tiers. It is not so farfetched to learn that the aging wine is accompanied by calm music, when tasting the light, yet serious wines from this house. An elegance that can only be experienced on the tongue, we find their style to compete with some of the greatest wines of Italy.

Tech Sheet
