Fast-forward over four hundred years, and the estate’s growth has not only been impressive, but the focus on quality and respect for the land they have grown into, has grown at even more stunning rates. The family now operates 5 individual and small Chateau throughout the Languedoc, each focusing on different terroir, different climate, and the differing native grapes, with respect for the land and grapes as their top priority. Louis Fabre became one of the first in the Languedoc to ‘go green’ in 1991 by converting the property to organics, and in 2014 the estate was awarded with the level 3 HVE (high environmental value). The Équilibre range of wines is a portion of their consciously farmed fruit that is dedicated to predominantly single varieties, and from general IGP areas of the estate. And though the appellation allows for all Muscadet Sur Lie wines to contain 3 grams of residual sugar, and for all others to contain 5 grams, Jean-Pascal first and foremost pushes his fermentations to the end, to yield wines with zero residual sugar that are dry and crisp with high acidity, and suitable for aging. He is also firm in his belief that barely a minimal amount of SO2 is needed to keep his wines alive.\u003cbr\u003e\u003cbr\u003eComing from a family that has worked to maintain and grow its presence in Loire, Jean Pascal’s great grandfather worked as a vigneron in 1875, when the family’s holdings were at 11ha. Since 1983, Pascal has brought the domaine's holdings up to 84 ha., including 35 ha. of the acclaimed Clos de l'Audigere, which sits on gabbro soil, a form of ancient volcanic rock that allows the vines to dig deep, picking up nutritional components along the way. By purchasing only smaller vineyards that are directly connected to his current vineyards, Pascal could keep the fruit as close to the winery as possible, to maintain its freshness, by avoiding sun contact and bruising, and to keep the grapes cool so that the wine is at its clearest after its been racked from its lees. It is then aged for 3 months in both steel (85% of the wine) and 54-liter demijohn (15%), before it is bottled without filtration or any sulfites. The resulting wine is floral and herbaceous on the nose, showing its fresh fruit character as well, but layered with depth and intrigue. The palate is lively and light, with ample acidity and balance, and is unpretentious and enjoyable. Josep Ma Rosell Gracia is the 5th generation of his family of grape growers in Santa Oliva, who since 1868 have had a challenging history of tending to the estate, while dealing with war and phylloxera, all the while selling grapes and other Mediterranean crops to the local community. For the first time in the estate’s history, Josep began making wine in 2010 (after studying oenology), and then with Rebeca (who is also an oenologist) who joined in 2015 when they fell in love, and brought together the family’s land and traditions, while dedicating only the best fruit from the 30 hectares of vines to a tiny production of less than 20,000 bottles annually. The couple grows most all their own food as well, with gorgeous vegetable gardens, almond, carob, and olive trees, and they even have a small hut on the property where they age their own vinegars. The land is gorgeous, and their efforts to preserve their soil and ecosystem is inspiring, giving focus to the Mediterranean terroir, full of clay and loam soils topped with stones. Nelly France is from Brittany (France), Arnaud De Boel is from Belgium, and they met in 2009 in New Zealand where their love for food and wine brought them together and quickly found a love for one another. With their two young children Augustin and Margot, the family chooses biodynamic farming and winemaking, and owns vineyards in the Northern Rhone where they live (in Saint Joseph and Cornas), and some land in the Southern Rhone close to the villages of Suze-la-Rousse and Sainte-Cécile-les-Vignes. Fermented with native yeasts in stainless steel and neutral oak, and matured for five months in oak. The wine was transferred to stainless steel to settle for an additional 2 months before bottling, unfined\/unfiltered.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eMr. Cappiello got his start in restaurants, his wine career began in 2002 as a Sommelier at Tribeca Grill. As time progressed his roles changed to Wine Director and restaurant owner over the next 15 years. Through connections with countless winemakers and after meeting his current business partner Pax Mahle, the transition to Winemaker was a natural progression for Cappiello. He still serves as Wine Director of Walnut Street Café in Philadelphia.
