In Refrontolo, a small hilly village between the two famous Prosecco towns of Conegliano and Valdobbiadene, the family began, and they have recently accrued two other vineyards for a combined 40 hectares of total estate. In 1971, Tiziano De Stefani (Alessandro's father) moved his family to the Fossalta di Piave where they could grow many different grapes on the clay soils of the old river plain as well as their esteemed Glera vineyards for Prosecco production. A complete dedication to practices that are as natural as possible means the estate is organically farmed (soon to be certified), they rely only on naturally occurring yeasts, and never add sulfites during vinification (since 2009) to make beautiful wines from the many varietals that they have found in their unique terrain. De Stefani's Redentore label comes from the younger vines of the estate that will someday be destined to carry the house's flagship label. All the wines are vinified in the exact same way but bring incredible value to the estate as a whole. Since 2015, the Redentore wines are made with no additions of sulfites whatsoever and prove to be of the highest quality while showcasing mono-varieties of the estate.

//cdn.shopify.com/s/files/1/0727/8755/8673/files/redentore-chardonnay_065cb506-802b-455d-bb49-d4d3e8574c81.jpg?v=1685389148
domaine-ansen-geierstein-riesling-2022-750-ml
Domaine Ansen Geierstein Riesling 2022 (750 ml)

100% Riesling

The 2022 Domaine Ansen Geierstein Riesling comes from a remarkable south-facing hill that is just north of Westhoffen. Natural fermentation begins in stainless steel and lasts for about one month with daily pump-overs. The finished wine rested in tank for about seven months before a small (and first) dose of sulfites, no filtration nor fining, and then bottling. The result is a golden straw white with aromatics of apples, crisp but ripe pears, and stony minerality. In the mouth, there is a lovely texture that remains vibrantly fresh, while still giving weight and depth, loaded with fruit, brine, and earth. Long in the mouth, and built for a gigantic feast.

There is a very exciting renaissance that has been happening in the Beaujolais region of France, and at its core is a new generation of winemakers that have learned everything they know from their progenitors. To pair with that unparalleled guidance, there is a youthful energy and worldly view that is taking the wines and the region to new heights. Sébastien Besson is now the fourth generation of the family to take the helm at Domaine du Penlois, which originated in the 1920’s by his great-grandfather Benoît, situated on a small hill called Lancié (nestled in between Morgon, Fleurie, and Moulin-à-Vent). Sébastien’s father, Maxence, took over in 1977 and accrued more and more Cru vineyards in the region, giving the Domaine 30 hectares in total. While making the sustainably farmed Domaine wines with his father, Sébastien began an eponymous project in 2016. He converted small granite-rich plots on the property to strict organic farming, spanning not only portions of their Village Appellation sites, but parcels of three Crus as well (a total of 7 hectares). With natural fermentations and aging in concrete vats, and a small sulfur addition before bottling, the wines of Sébastien Besson are pure, driven, and remarkable expressions of top Beaujolais.

Tech Sheet

//cdn.shopify.com/s/files/1/0727/8755/8673/files/SebastienBessonBeaujolaisBlancLaCriee2020_562961fb-6f3a-4ebf-993a-1aa3788637ed.png?v=1697129679
quinta-do-romeu-branco-reserva-2022-750ml
Quinta do Romeu Branco Reserva 2022 (750ml)

Field Blend of Gouveio, Rabigato, Viosinho, Arinto

The 2020 Quinta do Romeu Reserva Branco is the estate’s only white wine, made from a field blend of local white varietals, predominately Douro Gouveio Real, Rabigato, Voisinho, and Arinto. Brother and sister winemaking team Giacomo and Flavia Rallo have taken the lead in continuing the tradition of making organic, natural wines to best showcase their family's vineyards. The vines, aged around 30 years old, come from some of the best terroirs on the volcano: the North Slope of Mount Etna, in the Zottorinoto and Puntale Palino contrada of Solicchiata, a hamlet of Castiglione di Sicilia, at 950 meters (3116 feet) altitude and on sandy volcanic soils. They are treated Organically, hand-harvested, wild yeast fermented in stainless steel, then a portion aged in old 500 liter Slavonian oak before being bottled with a light fining, filtering. The wines are then aged another 2 months in bottle before being released. These massale selection vines thrive in gray marl soils, producing a wine of striking complexity and character. Harvested by hand, the grapes undergo a gentle two-hour press before fermentation begins in stainless steel. About halfway through, the wine is transferred to old 350L barrels to complete fermentation and mature for 12 months. The ouillé (topped-up) aging process preserves freshness while avoiding oxidation. Only a touch of sulfur is used at all (after destemming), with no fining, and a light plate filtration to ensure clarity without compromising texture. This Savagnin is spicy, savory, and deeply mineral, carrying an almost cheesy and herbal flare that lingers on the palate. The domaine officially took shape in 1970, when André Grand and his brothers expanded the family vineyards to 25 hectares, fully dedicating themselves to viticulture—building on the foundation laid by their father, René Grand. This set the stage for the next generation to carry the domaine forward. In 2011, Emmanuel Grand (André’s son) and Nathalie Morin took the reins, bringing a new vision to the estate. With deep roots in Jura wine—Emmanuel continuing his family’s legacy and Nathalie coming from a line of winemakers in Arbois—they sought to refine the domaine’s focus. By 2015, they had carefully selected the finest 11 hectares to farm organically, prioritizing sustainability, precision, and the purest expression of their terroir. Their vineyards stretch from Arbois to Château-Chalon, with the majority surrounding their home, featuring vines ranging from 25-50 years old to a remarkable century-old plot. Specializing in Chardonnay, Savagnin (both ouillé and oxidative), Trousseau, and Pinot Noir, Domaine Grand produces around 45,000 bottles annually. With Nathalie leading the work in the vineyards and Emmanuel in the cellar, they handle everything themselves—practicing organic farming, aging in old barrels, and using only minimal sulfites at pressing. Shaped by the Jura’s challenging climate, their wines are pure, expressive, and deeply compelling.

Tech Sheet

100% Viura
Fermentation Stainless Steel
Aging No oak aging, 3 months on lees
Filter / Fining Light filter, Pronatur White
ABV 13%
Farming Methods Sustainable

Solar de Randez Blanco is made only from Viura (known as Macabeo in Catalunya) grapes, from Raimundo’s wife’s family vineyards that are now nearly 80 years old, creating a blanco which is a dynamite example of a fresh style of white Rioja. This is exceptional Rioja that brings together historic practices in the cellar, while also taking advantage of some more modern techniques, all while offering great value for authentically made wine from an area where large production has become a norm.

Tech Sheet

100% Sauvignon Blanc
Fermentation Stainless steel, Neutral yeast
Aging 3 months
Filter / Fining Light filter, Bentonite
Total Sulfur / RS 78 mg/l, 0 g/l
Farming Methods Organic Certified
ABV 12%

The 2024 Équilibre Sauvignon Blanc vineyards comes from the south side of the famous village of Beziers, just east of the AOC Corbieres. Fast-forward over four hundred years, and the estate’s growth has not only been impressive, but the focus on quality and respect for the land they have grown into, has grown at even more stunning rates. The family now operates 5 individual and small Chateau throughout the Languedoc, each focusing on different terroir, different climate, and the differing native grapes, with respect for the land and grapes as their top priority. Louis Fabre became one of the first in the Languedoc to ‘go green’ in 1991 by converting the property to organics, and in 2014 the estate was awarded with the level 3 HVE (high environmental value). The Équilibre range of wines is a portion of their consciously farmed fruit that is dedicated to predominantly single varieties, and from general IGP areas of the estate. Working to showcase the vibrancy of each grape and the terroir from which it comes, this group of remarkable values from the south of France is a beautiful accompaniment to the AOC expressions of the domaine.

Tech Sheet

//cdn.shopify.com/s/files/1/0727/8755/8673/files/FamilleFabreEquilibreSauvignonBlanc.png?v=1760467441
emme-the-sun-egg-muscat-vert-russian-river-valley-2024-750-ml
Emme 'the sun egg' Muscat Vert, Russian River Valley 2024 (750 ml)

Grape: 100% Muscat Vert
Vineyard: Nakai
AVA: Russian River Valley
Farming: Organic, Dry Farmed
Harvest Date: 30 August 2024
Bottling Date: 20 March 2025
Alc: 13%
Cases: 75

My second time making an individual wine out of Aki Nakai’s Muscat Vert, and I love the 2024 just as much as the 2023. While the weather in Russian River Valley was similar to Redwood Valley (consistently hot but no major heat waves, and cold nights), the Muscat Vert is less hardy than the Colombard or Carignan, and prefers cooler weather. As a result, the vines didn’t produce as much fruit as they did in 2023, and the grapes are perhaps even more aromatically concentrated.

The Muscat Vert was pressed directly, settled overnight, and racked off gross lees to stainless steel for fermentation. Once fermentation finished, the wine was placed into a combination of stainless steel and neutral oak barrels to age for 6 months before being racked together for bottling in March.

Aki calls this fruit Muscat Vert, so I feel it’s right to put this variety on the label. However, I am unsure as to whether or not it is truly a Muscat, as it lacks the distinctive aromatics I normally associate with the variety. At the same time, it is certainly more aromatic than Colombard or Chardonnay or Chenin, an aspect which I believe is beautifully exemplified in this direct to press expression of the grape. Whatever the variety is, it is unique among the other wines I produce, and I am very happy to be able to continue to make a single varietal wine from it.

Indigenous yeast fermentation. Josep Ma Rosell Gracia is the 5th generation of his family of grape growers in Santa Oliva, who since 1868 have had a challenging history of tending to the estate, while dealing with war and phylloxera, all the while selling grapes and other Mediterranean crops to the local community. For the first time in the estate’s history, Josep began making wine in 2010 (after studying oenology), and then with Rebeca (who is also an oenologist) who joined in 2015 when they fell in love, and brought together the family’s land and traditions, while dedicating only the best fruit from the 30 hectares of vines to a tiny production of less than 20,000 bottles annually. The couple grows most all their own food as well, with gorgeous vegetable gardens, almond, carob, and olive trees, and they even have a small hut on the property where they age their own vinegars. The land is gorgeous, and their efforts to preserve their soil and ecosystem is inspiring, giving focus to the Mediterranean terroir, full of clay and loam soils topped with stones. With a sincere effort to make wine with as little intervention as possible, they farm native grapes, and experiment with several different aging vessels, such as demijohns and amphora. Their focus is to make unique wines, with history behind each bottle, giving a personal touch and different experience to every expression they create.

Tech Sheet

85% Godello, 10% Treixadura, 5% Dona Branca
Fermentation French oak, Indigenous yeasts
Aging 6 months
Filter / Fining None, Natural bentonite
ABV 13.5%
Farming Methods Biodynamic (not certified)

The 2023 Ronsel do Sil Vel’uveyra Godello comes from some of the estate’s higher elevation steep vineyard sites that range from 25 to 50 years old. With vineyards planted throughout treacherously steep slopes (ranging from 300 to 700 meters above sea level), all pruning, maintenance, and harvest is carried out by hand on old terraces built by the ancient Romans called Bancales. Maria José Yravedra is an absolute visionary for the region, producing wines that not only show incredible varietal integrity, but she accomplishes this through natural farming and biodynamic principles, making around 45,000 bottles a year from their 10 hectare estate. Her philosophy is based on what she calls ‘heroic’ viticulture, reflecting a sincere balance with nature, through love and compromise with the land. Aside from composting each year with gorse (the last harvest’s prunings and remains), sheep graze the vineyards once a year to add their natural flare and keep excess plants at bay. In the cellar, an absolutely minimal approach is the secret to each perfect bottling, with a gravity flow system instead of pumps, all old wood and concrete use for aging, and very little sulfur additions, letting the native grapes of the area tell their individual story.

Tech Sheet

100% Verdejo
Fermentation Stainless steel, Selected yeasts
Aging None
Filter / Fining Yes
ABV 13%
Farming Methods Sustainable

Lanzos Blanco is not only remarkably fresh and delicious, but it is a great example of the incredible value coming from the Castilla y Leon region of Spain. Paying close attention to the temperature is very important to the winery at this point, to ensure healthy activity as well as locking in wonderful aromatics and varietal character.

Tech Sheet

100% Ondarrabi Zuri
Fermentation Stainless steel, Selected yeasts
Aging No oak aging
Filter Diatomaceous earth, Pea Protein
ABV 12.2%
Farming Methods 70% sustainable, integrated; 30% organic

The ‘Pilpil’ Pouch ‘Bagnum’ is a wine for just about every situation. His passion began to take form in 1996 when he accrued his estate near the town of Okondo, and began planting his first 2 hectares of vines, and grew with each year. Once his vines produced the grapes he found suitable, he built his bodega in 2008 for his first vintage of wine at the age of 68. Hand-harvested at full maturity, the grapes are destemmed and fermented in stainless steel tanks using a pied de cuve to ensure a strong, complete fermentation, mitigating any risk of volatile acidity from the ripe fruit. Aged for one year in old 228L Burgundy barrels in the ouillé style (topped-up every 3 days to prevent oxidation), the wine sees no racking, minimal sulfites at harvest (5 g/hl), and no added sulfur before bottling. It is lightly plate-filtered but unfined, preserving its purity and depth. The result is a textural, layered Chardonnay that balances its rich, honeyed, ripe fruit profile, with Jura’s hallmark freshness. Aromas of golden apple, pear skin, toasted hazelnuts, and crushed limestone lead to a palate that is round yet so very vibrant, with a long, saline-driven finish.

Inspired by Domaine Grand’s wines, (Parisian street artist) Bast created a bold, textured masterpiece for the Domaine - Joachim Werner artfully deconstructed it, weaving its essence into each label to match the energy & spirit behind every wine

Nestled in the Jura, Domaine Grand is a story of family, passion, and an unwavering commitment to the land.

Tech Sheet

Dabouki wine is obtained from the indigenous Palestinian grape called Dabouki, cultivated mainly in the area of Bethlehem and Hebron. The grapes are of green-yellow color.

Harvest
The grapes ripen around the middle of September. After a hand harvest, the grapes were brought to the cellar and saw a horizontal press with whole bunches so that a natural fermentation in stainless steel could begin. The fine lees were stirred often to give great texture to the wine, and since Grenache Blanc does not have naturally high acidity, after fermentation finished, the wine was placed outside for the winter (with one racking after about two weeks), preventing malolactic fermentation to take place, and retaining as much freshness as possible in the finished wine. After a second racking in February, and a dose of SO2, the wine was bottled in March for an April release. Brilliant aromas of jasmine, honeysuckle, and a touch of iodine, lead to a very round mouth feel that has a mineral driven freshness, a yeasty quality, and an overall scrumptious texture.

Jasus Lalandi is a species of lobster that lived off a small island between Australia and South Africa that was under French rule. With their two young children Augustin and Margot, the family chooses biodynamic farming and winemaking, and owns vineyards in the Northern Rhone where they live (in Saint Joseph and Cornas), and some land in the Southern Rhone close to the villages of Suze-la-Rousse and Sainte-Cécile-les-Vignes. Grafted in 2020 this will be our second vintage of our Savagnin. This wine and varietal type are on point from our clay soils at the ranch. Cole Ranch is home to 2 clones of Savagnin: Savagnin Vert ("green") and Savagnin Jaune ("yellow"). Both have their role in this wine as the Jaune provides aromatic flavors, and the Vert is prized for its acidity. Most of us think of Savagnin as a Vin Jaune ("yellow wine"), where the wine sits in barrel for up to 6 years under a veil (a layer of yeast called Le Voile ("the veil")) giving the wine a nutty, spiced Sherry like character. The Rootdown Savagnin is made in the Ouillé style (regularly topped) - So think fresh!

Cole Ranch
Our vineyard, Cole Ranch, is the smallest Appellation in the United States at 180 acres and 44 acres producing fruit. It sits inside of a terrarium-like microclimate and is tightly surrounded by multiple mountain ranges and hills with no other vineyards close by. Cooler and wetter than surrounding wine producing areas, its high elevation, drastic temperature swings and overall cooler climate leads to a longer growing season which preserves the acidity that is unique to Cole Ranch fruit. Cole Ranch hosts a terroir known for wines expressing vitality, earthiness, and electricity. When Mike acquired this vineyard in 2019, he began the stewardship of a vineyard that expresses its true self with grapes that thrive in its unique conditions. With steep terrain and a unique microclimate, Cole Ranch is particularly suited to growing Alpine grape varieties to create unique, thought provoking wines lead by terroir and texture.

Tech Sheet
