The De Boel family uses a gentle vertical press after fermentation and malolactic usually happens around February. By March or April the wine is bottled and sent to market to show its purest form, with notes of peppery spice, blackberry, boysenberry, and a touch of cured meat. On the palate the wine is fresh, but has deep complexity, showing dark berry fruit, spice, licorice, and great minerality.

Famille De Boel France is a small family estate owned and run by an enthusiastic and inspired husband/wife team in the high elevations of Saint Joseph. This is a project born from passion, not born from inheriting vineyards or a cellar. Nelly France is from Brittany (France), Arnaud De Boel is from Belgium, and they met in 2009 in New Zealand where their love for food and wine brought them together and quickly found a love for one another. With their two young children Augustin and Margot, the family chooses biodynamic farming and winemaking, and owns vineyards in the Northern Rhone where they live (in Saint Joseph and Cornas), and some land in the Southern Rhone close to the villages of Suze-la-Rousse and Sainte-Cécile-les-Vignes. They are completely dedicated to the celebration of how food and wine come together in so many magical occasions, and strive to make wine that is meant for the table, meant to enjoy with friends and family, and meant for all of the Bon Vivants of the world; something they can pass on hopefully for generations to come.

Tech Sheet

//cdn.shopify.com/s/files/1/0727/8755/8673/files/DBF_Voraces_b41def5b-917e-47aa-9195-f35702a7bf1a.jpg?v=1744045467
la-grange-de-loncle-charles-kaefferkopf-2017-750ml
La Grange De L'Oncle Charles Kaefferkopf 2017 (750ml)

The nose is on yeast and lemon, granny apple and hot apple. My wife asks if it's a new wine. Hum, atmosphere, some would say it smells like natural wine. Indeed, in the mouth, it's natural! The wine is light, a little lemony, and frankly on raw cider. It's quite lively, refreshing on my right, thirst-quenching on my left.

Grape royalty

Gewurztraminer, Riesling, Pinot Blanc, Sylvaner, Muscat, Pinot Noir… On bottles of wine from Alsace, it’s the grape varieties that top the bill. Which makes sense, given that they also bear the appellations of the region and that blends aren’t part of the local culture. Does this mean then that the characters of wines from this part of France are defined by its grape varieties alone? That the terroir is irrelevant? Merely a perfectly neutral, silent substrate? Of course not, that would be a very simplistic view! Especially since it would dismissing another important point: Alsace is a great vineyard of terroirs and a vineyard of great terroirs.

51 Grands crus

The Alsace wine-making region has a rather “Chilean” profile, being 120 km (75 miles) from north to south and just a few kilometers from east to west. It is distinguished not only by the charming villages that line its Wine Route, but by its lively and complex geology. So much so that over time, generations of winemakers have identified and ranked some particularly remarkable terroirs. Some are classified as lieux-dits (named plots), and the most exceptional have been elevated to Grand cru status.
There are exactly 51 of them, all with distinct profiles. Some fifteen geological families have been identified, including granite, clay, sandstone, schist, and limestone. Generally located at an altitude of between 200 and 400 meters (between 656 and 1312 feet), the Grands crus, often quite steep, benefit from distinguishing soils as well as exposures and micro-climates that promote slow, consistent grape maturation, which is the reason for the very finely expressed aromas of the wines.

Great diversity

The reason for identifying different areas in this way becomes obvious as soon you taste wines of the same grape variety from two different terroirs. Riesling, for example, is easily recognizable on tasting, but also has a reputation for being a fine indicator of terroir. There’s a world of difference between the bold generosity of a Riesling from the Kaefferkopf Grand cru and the calm intensity, characterized by cleanness and salinity, of the same grape from the very volcanic Rangen Grand cru. More than in some other wine regions, the vineyards of many Alsatian estates are quite parceled up. Which can be quite constraining day to day, especially during the harvest, but is a real boon when it comes to the diversity of wines they can offer. So as you can imagine, great connoisseurs of Alsace wines don’t stop with “I like Riesling” or “I don’t like Gewurztraminer”… When they talk about their preferences, they describe the details of each terroir with relish. Why not do the same?

In past lives Jerôme François was both a carpenter and sommelier. Labeled Vin de France because the region doesn’t yet allow for this style of wine, the 20-year-old Chardonnay vines grow on a small plot of clay and limestone not far from the winery. Having spent 18 days on the skins during natural fermentation, the grapes were then gently pressed and returned to the stainless steel until complete (about 25 days total). The weather in 2016 required a lot of attention in the vineyards, but by the time harvest came, the weather spiked and allowed for some very healthy grapes. The fruit was pressed from whole bunches into stainless steel tanks and a very neutral yeast was used to aid in fermentation in order to keep the temperatures very low and the aromatics and phenolics of the wine present. On April 8th, 2017, the wine was bottled and then after 30 months of rest, was disgorged and given a dosage from its own grape’s residual sugar of 6 g/l. The clay and limestone soils are difficult on this hill, and force the vine roots to go very deep for nutrients, therefore showing great elegance and length in the final wine. Creamy and delicious Pinot fruit is expressed immediately on the palate with a touch of cherry liqueur and vanilla, while leading to a crunchy stony mid-palate of graceful minerality.

In the northern most hills of the Alsace AOC of eastern France, Domaine Ansen has been a family of grape growers, fruit orchard farmers, cattle raisers, and all things in between, for over 400 years. Originating from 40-year-old vines in mostly clay soil, the wine undergoes natural fermentation in steel tanks with its skins for three full weeks until it is completely dry. While fermenting, Olivier captures all the CO2 emitted and later pumps it back into the wine during bottling, achieving about 4 atmospheres of pressure. Their commitment to humility and common sense has led them to a place where the wines express their vivacious personality, endless creativity, and pure expression of terroir, all the while being fully dedicated to organic and biodynamic farming since 2016. Starting with just 4.5 hectares, they have expanded over the years by acquiring small neighboring plots, and now farm around 8 hectares of vines, producing about 60,000 bottles annually through their various labels, appellations, and diverse projects. Olivier has a deep passion for Muscadelle and aims to expand wine drinkers' palates with this grape, while also showcasing his special ability to allow Merlot and Cabernet Franc to sing in unique and novel ways compared to his regional counterparts. To pair with that unparalleled guidance, there is a youthful energy and worldly view that is taking the wines and the region to new heights. Sébastien Besson is now the fourth generation of the family to take the helm at Domaine du Penlois, which originated in the 1920’s by his great-grandfather Benoît, situated on a small hill called Lancié (nestled in between Morgon, Fleurie, and Moulin-à-Vent). Sébastien’s father, Maxence, took over in 1977 and accrued more and more Cru vineyards in the region, giving the Domaine 30 hectares in total. While making the sustainably farmed Domaine wines with his father, Sébastien began an eponymous project in 2016. Being a mono-varietal Syrah and not a blend, this mix of estate fruit is from both the commune of St. Jean de Muzols (young vines) and Tournon (a vineyard of about fifty years). Each year is harvested by hand when the perfect balance of pH and sugar development is found in the grapes. The grapes are fermented in stainless steel and see regular punch downs for the first week, and then gentle pump overs until complete. Half of the wine remains in tank, and the other half is placed into old French barrique for about a year until it is bottled. The result shows classic black and red fruits on the nose, as well as pork fat and peppercorns, while the palate follows with a deep core of minerality, ripe and fresh fruit, and is lined with spicy acidity.

The ‘Rue de Poulies’ (Pulley Street) no longer exists, but was a road between the Seine and the Louvre in Paris. A blend of typically three vintages, the base wine consists of 80% reserve cuvée (kept in stainless steel) and 20% from the current harvest, ensuring a depth of character and consistency. Fermentation takes place entirely in stainless steel, preserving freshness and precision. The blended wine then rests on lees for 2 to 2.5 years before disgorgement, allowing for exceptional complexity and texture. True to its name, this Crémant sees no dosage, highlighting its pure expression and mineral-driven structure. With an incredible mouthfeel, this wine is both layered and deeply expressive, showcasing bright citrus, green apple, almond, and delicate brioche notes. These massale selection vines thrive in gray marl soils, producing a wine of striking complexity and character. Harvested by hand, the grapes undergo a gentle two-hour press before fermentation begins in stainless steel. About halfway through, the wine is transferred to old 350L barrels to complete fermentation and mature for 12 months. The ouillé (topped-up) aging process preserves freshness while avoiding oxidation. Only a touch of sulfur is used at all (after destemming), with no fining, and a light plate filtration to ensure clarity without compromising texture. A five day cold maceration precedes fermentation, with six months of skin contact in infusion tanks at warmer temperatures to enhance texture and depth. Twice-daily pump-overs maintain balance before pressing. Malolactic fermentation takes about a month to complete, and the wine is aged 14 months in neutral 228L barrels, with topping up every four days to prevent oxidation. Since Pinot Noir is the only allowed red grape in Cremant, and it is illegal to blend white and red grapes, this is a 100% expression of the grape. The fruit was pressed from whole bunches into stainless steel tanks for a long and slow cold fermentation. The wine was bottled and then after 20 months of rest, this sparkling is disgorged on demand with no dosage and only topped up with the same juice from other bottles. Between the non-fertile clay soils, the extreme temperature shifts of the region, and the soft touch with the grapes, the result is quite delicate in the glass with a gorgeous concentration of aromas. In the mid-nineties, Daniel Ansen set out to learn the trade of winemaking, spending time not only in Alsace, but also Australia, the United States, and Bordeaux, where he went to enology school. In 2010 he moved back into the old family house with his wife Karine and took over the fields from his father, looking forward to converting everything to organic viticulture, and starting to make wine from their grapes that had always gone to a local cooperative. Slowly expanding in Alsace’s diverse land, Daniel farms 8.5 hectares, in 40 plots (some are as small as 2 rows of vines), to 8 grape varieties, on 3 different soil types (black clay, limestone, and sandstone). Careful hand harvesting, the use of stainless steel for natural fermentations and aging, and very little (to zero) sulfite use in the finished wines, he lets each grape express their natural characteristics to the fullest, be it laser acidity, sweet ripe fruit, or a combination of both.

Tech Sheet

//cdn.shopify.com/s/files/1/0727/8755/8673/files/Cremantd_AlsaceRose2021_80d0dbcb-abf9-4ba5-8b5d-ff3ca511be5a.png?v=1762272979
famille-fabre-equilibre-sauvignon-blanc-2024
Famille Fabre Équilibre Sauvignon Blanc, Pays d'oc 2024 (750 ml)

100% Sauvignon Blanc
Fermentation Stainless steel, Neutral yeast
Aging 3 months
Filter / Fining Light filter, Bentonite
Total Sulfur / RS 78 mg/l, 0 g/l
Farming Methods Organic Certified
ABV 12%

The 2024 Équilibre Sauvignon Blanc vineyards comes from the south side of the famous village of Beziers, just east of the AOC Corbieres. Fast-forward over four hundred years, and the estate’s growth has not only been impressive, but the focus on quality and respect for the land they have grown into, has grown at even more stunning rates. The family now operates 5 individual and small Chateau throughout the Languedoc, each focusing on different terroir, different climate, and the differing native grapes, with respect for the land and grapes as their top priority. Louis Fabre became one of the first in the Languedoc to ‘go green’ in 1991 by converting the property to organics, and in 2014 the estate was awarded with the level 3 HVE (high environmental value). The Équilibre range of wines is a portion of their consciously farmed fruit that is dedicated to predominantly single varieties, and from general IGP areas of the estate. The vineyard plot is on a terraced slope where almost every terrace is a slightly different composition of soil, ranging from sandy marl, to rolled pebbles, to oyster fossil filled limestone. This, along with the nature of the grape and the gorgeous fruit trees and forest that surround, lead to a very layered grape that has lovely acidity and texture, perfect for extended skin time. Once at the cellar, the fermentation takes place in tank (with 10 days of skin contact before pressing), and is then moved to 160L amphora, acacia wood, and a few used oak barrels for aging. After a paper filtration, the wine is bottled with a bit of sulfites and released to the market. Although fermented with skins, the color of the grape is not remarkably dark, so the wine shows a lovely golden hue versus an ‘orange’ look. But the layers it adds to the final wine is noticeable and full of great texture. Having started with just 1.5 hectare, they now farm 12 hectares of land, and since the beginning have worked organically to match their fully organic lifestyle. Nestled near St. Chinian and the Coteaux d’Ensérune, Stéphane works with a variety of grapes to showcase his skills and love for the region and is a leading expert on micro-oxygenation in wine, utilizing many vessels in his cellar to get the most from his grapes: amphora, acacia, French wood, concrete, etc. A true force in the Coteaux, these clean and expressive wines are growing a fan base around the world.

Tech Sheet

70% Muscadelle, 30% Semillon
Fermentation Stainless steel, Pied de cuve
Aging 9 months
Filter / Fining #3 plate filter, None
Total Sulfur / RS 65 mg/l, 1 g/l
Farming Methods Organic (Eco cert)
ABV 12.5%

Echappée Bel Blanc is a young and fresh expression of both Semillon and Muscadelle, which Olivier is extremely passionate about. The fruit is harvested from 40-year-old vines on clay and limestone soils and undergoes a very cold but short maceration to enhance the aromatics and texture of the finished wine. The wine is fermented in stainless steel tanks with a strong fermenting natural pied de cuve from the first grapes harvested, for approximately 15 days, but it does not go through malolactic fermentation. Olivier sources Merlot from a trusted farmer who has a plot of Grand Cru vines in St. Emilion specifically for this rosé. The grapes are hand-harvested before the sugars become too high and brought to the cellar for a natural start to fermentation in stainless steel. After only one day, the grapes are pressed, giving the wine a gorgeous kiss of color, and then moved into 6-year-old Allier 600-liter barrels to continue fermenting. The wood imparts interesting aromas and tannins to the finished wine, which completes its fermentation after approximately 15 days. The wine is never vintage dated, which is brilliant because good rosé should be enjoyed for a couple of years and not just immediately after harvest. Although it is always single vintage, there is no obsessing over its "correct" vintage. The aromatics are very pretty, full of soft berries, red plums, a hint of wood, and cherry cordial. This Merlot is from 30-year-old vines that as soon as the fruit is ripe and the acidity levels want to start decreasing, Olivier harvests immediately and brings into the cellar for a natural fermentation in stainless steel tanks. The ferment lasts about 15 days, but only half of that is with the skins still in contact with the juice, giving the wine a fresh style and lighter approach to these lovely grapes. It then rests for at least a year until bottled, but truly waits until the next bottling is needed to fill needs. Coming from only Cabernet Franc on clay and limestone soils, these 20+ year old vines are destined to share their existence in the bottle with the same fruit from each harvest, going through a true ‘Solera’ style process. Each year, the fruit averages 2-4 weeks on the skins during natural fermentation before pressing, which takes place in open, 500-liter barrels, that are punched down daily. Once pressed, the juice goes into French Tonneau (2-6 years old) barrels on top of the previous vintage’s remains that follow the yearly botting. This process, called soutirage, means that the wine was aged for at least a single year, as this is a bottling from 2020 where the 2011-2019 vintages were captured. The nose opens incredibly with a bit of time, showcasing licorice, olive, black cherry, and a touch of black pepper. As the vintages pass, Jeff’s participation has been able to lessen, and soon his name won’t appear anymore as Olivier has begun to master his own art. Inspired by Burgundy, this wine is all about discovering the terroir of Bordeaux through Merlot; hand-harvest, no wood, only vats. With a castle from the year 1400 as their landmark, this wine estate began in 1930, but took on new ownership in 1996, when the shift in farming and quality production really began. After the hand-harvesting, the grapes came to the cellar and went directly to press, resulting in a pale rosé color that only kissed the skins for a few moments before moving onto stainless steel for a month long cofermentation. During this time, a careful eye is used to ensure that the activity of yeasts are working vigorously while the low temps help to create phenomenal aromatics, and great varietal character. The wine was then aged for 4 months in concrete vat until it was bottled in and aged slowly on its lees for nearly four years, when it then saw a dosage of 7.5g/l of grape juice, not sugar. The resulting bubbles are stunning in the nose, with a beautiful red berry fruit that has been doused in confectionary sugar, giving a lovely marshmallow quality that also seems to find itself in the texture of the mouth. These 30-year old vines produce grapes that ferment naturally with its own pied de cuve, in stainless steel tanks. When the residual sugar hits 15g/l, the wine is cooled to slow the ferment and bottled to finish the process under the pressure of the bottle, resulting in a naturally sparkling wine that is completely dry, yet full of superb fruit. No sulfites are added, and the wine isn't disgorged but remains quite stable upon opening. This fun, vibrant sparkler is filled with fresh red berries, subtle floral notes, and a touch of earthy minerality on the nose. On the palate, it's all about the bright, lively fizz, with fruit-forward flavors and a crisp, clean finish. The grapes are hand-harvested and then destemmed at the cellar, and then head to a soft pressing before entering concrete for fermentation with the ‘house’ pied de cuve. Paying close attention to the temperature is very important to the winery at this point, to ensure healthy activity as well as locking in wonderful aromatics and varietal character. After natural malolactic fermentation, the wine is racked and then remains in concrete for another 6 to 8 months before a light filtration and bottling. A 3-month rest is required to let the wine meld and relax a bit before release, and then once ready to open, the wine truly sings of the grape and the terroir. The nose is full of honeyed apples, pears, quince, wet stones, and wool, leading to an incredible fuller bodied mouth feel, with acidity-led vibrancy, crisp tree fruit, and extraordinary length. Gastronomic as well as gulpable, this Chenin is a lovely representation of Anjou.

Domaine de Bois Mozé sits on a gorgeous old piece of property in between the Loire Valley cities of Anjou and Saumur.
