This is a project born from passion, not born from inheriting vineyards or a cellar. Nelly France is from Brittany (France), Arnaud De Boel is from Belgium, and they met in 2009 in New Zealand where their love for food and wine brought them together and quickly found a love for one another. With their two young children Augustin and Margot, the family chooses biodynamic farming and winemaking, and owns vineyards in the Northern Rhone where they live (in Saint Joseph and Cornas), and some land in the Southern Rhone close to the villages of Suze-la-Rousse and Sainte-Cécile-les-Vignes. They are completely dedicated to the celebration of how food and wine come together in so many magical occasions, and strive to make wine that is meant for the table, meant to enjoy with friends and family, and meant for all of the Bon Vivants of the world; something they can pass on hopefully for generations to come.

Tech Sheet

//cdn.shopify.com/s/files/1/0727/8755/8673/files/DBF_Voraces_b41def5b-917e-47aa-9195-f35702a7bf1a.jpg?v=1744045467
flavia-pre-phylloxera-etna-rosso-2015-750-ml
Flavia Pre-Phylloxera Etna Rosso 2015 (750 ml)

Flavia Rallo and her team have won the Silver Medal at the prestigious Concours Mondial de Bruxelles for her inspirational Prephylloxera Etna Rosso 2015.

This is a magical blend of ungrafted Nerello Mascalese (80%) and Nerello Cappuccio (20%). Imagine if Burgundy was planted on the side of a volcano. In 2010 he moved back into the old family house with his wife Karine and took over the fields from his father, looking forward to converting everything to organic viticulture, and starting to make wine from their grapes that had always gone to a local cooperative. Careful hand harvesting, the use of stainless steel for natural fermentations and aging, and very little (to zero) sulfite use in the finished wines, he lets each grape express their natural characteristics to the fullest, be it laser acidity, sweet ripe fruit, or a combination of both.

"Nature is different every single year, so I don’t want (or expect) to make the same wines every year."
– Daniel Ansen

Tech Sheet
//cdn.shopify.com/s/files/1/0727/8755/8673/files/ANSEN-PINOT-NOIR_0597a446-97c7-4cb9-9ae1-0fcb339d6028.png?v=1697129468
mersel-dar-richi-hanan-2022-750-ml
Mersel Dar Richi 'Hanan' 2022 (750 ml)

Grapes: Cabernet Sauvignon (60%) & Malbec (29%) & Sangiovese (11%)
Farming: Organic
Yield: 15hL / Ha
Alcohol Content: 14%
Residual Sugar: 0 g/L
PH Level: 3.4
SO2: 19 PPM

Region: Bousit - North Lebanon (800m).

Best Opened: Best to open at 14-20 degrees celsius as one would a red wine.

Winemaking Method: Picked at the beginning of September and destemmed into stainless tanks, the wine is fermented for 10 days at 25 degrees celsius and racked off skins. In Refrontolo, a small hilly village between the two famous Prosecco towns of Conegliano and Valdobbiadene, the family began, and they have recently accrued two other vineyards for a combined 40 hectares of total estate. In 1971, Tiziano De Stefani (Alessandro's father) moved his family to the Fossalta di Piave where they could grow many different grapes on the clay soils of the old river plain as well as their esteemed Glera vineyards for Prosecco production. A complete dedication to practices that are as natural as possible means the estate is organically farmed (soon to be certified), they rely only on naturally occurring yeasts, and never add sulfites during vinification (since 2009) to make beautiful wines from the many varietals that they have found in their unique terrain. De Stefani's Redentore label comes from the younger vines of the estate that will someday be destined to carry the house's flagship label. All the wines are vinified in the exact same way but bring incredible value to the estate as a whole. Since 2015, the Redentore wines are made with no additions of sulfites whatsoever and prove to be of the highest quality while showcasing mono-varieties of the estate.

//cdn.shopify.com/s/files/1/0727/8755/8673/files/redentore-chardonnay_065cb506-802b-455d-bb49-d4d3e8574c81.jpg?v=1685389148
sebastien-besson-beaujolais-blanc-la-criee-2022-750ml
Sebastien Besson Beaujolais Blanc La Criee 2022 (750ml)

100% Chardonnay
Fermentation Stainless steel, Indigenous yeasts
Aging 7 months in stainless tank
Filter / Fining None
ABV 12.5%
Farming Methods Organic

The 2022 Sébastien Besson ‘La Criée’ Beaujolais Blanc is a vibrant and exceptional expression of Chardonnay from Beaujolais. On the property there is a small plot of limestone and clay that is dedicated to growing Chardonnay versus Gamay, and each year it creates beautiful depth in the fruit. The fruit is hand-harvested and arrives to the cellar for an immediate pressing into a very cold tank. Natural fermentation begins in stainless steel and lasts for about one month with daily pump-overs. The finished wine rested in tank for about seven months before a small (and first) dose of sulfites, no filtration nor fining, and then bottling. The result is a golden straw white with aromatics of apples, crisp but ripe pears, and stony minerality. To pair with that unparalleled guidance, there is a youthful energy and worldly view that is taking the wines and the region to new heights. Sébastien Besson is now the fourth generation of the family to take the helm at Domaine du Penlois, which originated in the 1920’s by his great-grandfather Benoît, situated on a small hill called Lancié (nestled in between Morgon, Fleurie, and Moulin-à-Vent). Sébastien’s father, Maxence, took over in 1977 and accrued more and more Cru vineyards in the region, giving the Domaine 30 hectares in total. While making the sustainably farmed Domaine wines with his father, Sébastien began an eponymous project in 2016. He converted small granite-rich plots on the property to strict organic farming, spanning not only portions of their Village Appellation sites, but parcels of three Crus as well (a total of 7 hectares). With natural fermentations and aging in concrete vats, and a small sulfur addition before bottling, the wines of Sébastien Besson are pure, driven, and remarkable expressions of top Beaujolais.

Tech Sheet

//cdn.shopify.com/s/files/1/0727/8755/8673/files/SebastienBessonBeaujolaisBlancLaCriee2020_562961fb-6f3a-4ebf-993a-1aa3788637ed.png?v=1697129679
mersel-red-velvet-carbonic-cinsault-2023-750-ml
Mersel 'Red Velvet' Carbonic Cinsault 2023 (750 ml)

Grape: Cinsaut (100%)
Farming: Organic
Yield: 20hL / Ha
Alcohol Content: 13%
Residual Sugar: 0 g/L
PH Level: 3.4
SO2: 31 PPM

Region:
Deir El Ahmar, Bekaa Valley (1,200m) - Cinsaut vines, 10 years old

Best Opened: Best to open at 10 degrees celsius as one would a white wine.

Winemaking Method: Hand-harvested in September, destemmed into a concrete tank. thrive on Jura’s distinctive clay and limestone soils. A blend of typically three vintages, the base wine consists of 80% reserve cuvée (kept in stainless steel) and 20% from the current harvest, ensuring a depth of character and consistency. Fermentation takes place entirely in stainless steel, preserving freshness and precision. The blended wine then rests on lees for 2 to 2.5 years before disgorgement, allowing for exceptional complexity and texture. True to its name, this Crémant sees no dosage, highlighting its pure expression and mineral-driven structure. With an incredible mouthfeel, this wine is both layered and deeply expressive, showcasing bright citrus, green apple, almond, and delicate brioche notes. The finish is long, precise, and refreshingly crisp, making it a benchmark example of Jura’s ability to produce elegant, terroir-driven sparkling wines.

Inspired by Domaine Grand’s wines, (Parisian street artist) Bast created a bold, textured masterpiece for the Domaine - Joachim Werner artfully deconstructed it, weaving its essence into each label to match the energy & spirit behind every wine.

Nestled in the Jura, Domaine Grand is a story of family, passion, and an unwavering commitment to the land. The domaine officially took shape in 1970, when André Grand and his brothers expanded the family vineyards to 25 hectares, fully dedicating themselves to viticulture—building on the foundation laid by their father, René Grand. This set the stage for the next generation to carry the domaine forward. In 2011, Emmanuel Grand (André’s son) and Nathalie Morin took the reins, bringing a new vision to the estate. With deep roots in Jura wine—Emmanuel continuing his family’s legacy and Nathalie coming from a line of winemakers in Arbois—they sought to refine the domaine’s focus. By 2015, they had carefully selected the finest 11 hectares to farm organically, prioritizing sustainability, precision, and the purest expression of their terroir. Their vineyards stretch from Arbois to Château-Chalon, with the majority surrounding their home, featuring vines ranging from 25-50 years old to a remarkable century-old plot. Specializing in Chardonnay, Savagnin (both ouillé and oxidative), Trousseau, and Pinot Noir, Domaine Grand produces around 45,000 bottles annually. With Nathalie leading the work in the vineyards and Emmanuel in the cellar, they handle everything themselves—practicing organic farming, aging in old barrels, and using only minimal sulfites at pressing. Shaped by the Jura’s challenging climate, their wines are pure, expressive, and deeply compelling.

Tech Sheet

33% Malbo Gentile, 33% Maestri, 33% Salamino

ABV 11.5%

Certified Organic

The 2023 Tenuta la Piccola ‘Nero di Cio’ Lambrusco is a vibrant and expressive sparkling red that showcases a blend of equal parts of classic indigenous varieties of the area: Malbo Gentile (which contributes a beautiful aromatic profile with dark fruit), Maestri (adding structure and a slight savory depth), and Salamino (offering fresh acidity and a lively, juicy mouthfeel). The fruit was pressed from whole bunches into stainless steel tanks for a long and slow cold fermentation. The wine was bottled and then after 20 months of rest, this sparkling is disgorged on demand with no dosage and only topped up with the same juice from other bottles. In the mid-nineties, Daniel Ansen set out to learn the trade of winemaking, spending time not only in Alsace, but also Australia, the United States, and Bordeaux, where he went to enology school. In 2010 he moved back into the old family house with his wife Karine and took over the fields from his father, looking forward to converting everything to organic viticulture, and starting to make wine from their grapes that had always gone to a local cooperative. Slowly expanding in Alsace’s diverse land, Daniel farms 8.5 hectares, in 40 plots (some are as small as 2 rows of vines), to 8 grape varieties, on 3 different soil types (black clay, limestone, and sandstone). Careful hand harvesting, the use of stainless steel for natural fermentations and aging, and very little (to zero) sulfite use in the finished wines, he lets each grape express their natural characteristics to the fullest, be it laser acidity, sweet ripe fruit, or a combination of both.

Tech Sheet

//cdn.shopify.com/s/files/1/0727/8755/8673/files/Cremantd_AlsaceRose2021_80d0dbcb-abf9-4ba5-8b5d-ff3ca511be5a.png?v=1762272979
famille-fabre-equilibre-sauvignon-blanc-2024
Famille Fabre Équilibre Sauvignon Blanc, Pays d'oc 2024 (750 ml)

100% Sauvignon Blanc
Fermentation Stainless steel, Neutral yeast
Aging 3 months
Filter / Fining Light filter, Bentonite
Total Sulfur / RS 78 mg/l, 0 g/l
Farming Methods Organic Certified
ABV 12%

The 2024 Équilibre Sauvignon Blanc vineyards comes from the south side of the famous village of Beziers, just east of the AOC Corbieres. Louis Fabre became one of the first in the Languedoc to ‘go green’ in 1991 by converting the property to organics, and in 2014 the estate was awarded with the level 3 HVE (high environmental value). The Équilibre range of wines is a portion of their consciously farmed fruit that is dedicated to predominantly single varieties, and from general IGP areas of the estate. The grapes are brought to the cellar and start naturally co-fermenting in steel tanks for 72 hours with the skins to extract great aroma, structure, and color. The must is bottled at the right density to achieve elegance, yet still wonderful crunchy fruit, and then laid to rest for 6 months to continue fermenting until fully dry with the lively yeasts inside. The bottles are then disgorged, and only refilled with the same wine – nothing foreign is added, including any addition of sulfites. The resulting fizz is a lovely turbid orange pink color, with a wildly intense aroma of orange peel and almonds, showing the unique profile of the two different grapes. The grapes were fermented primarily as whole clusters for about 12 days in stainless steel before they were gently pressed and then finished their natural fermentation and aging for 6 months in 400L Amphora, 3,000L concrete vats, and 500L 3-5year old barrels. He not only makes the wine from start to finish, but also is responsible for the clean yet beautifully crafted labels of the estate. Almost to the point of obsession, they have focused and repaired old vineyards with nearly extinct varieties in order to bring them back from the grave. Merseguera (a white grape) and Bonicaire (red) are of utmost importance to their farm, alongside the local Monastrell in order to make a small range of wines that are farmed as naturally as possible, and made with a soft hand. Can’ Leandro gives the best this region has to offer, being close to the Mediterranean but with higher elevations, poor sandy soils and ancient limestone, and a climate that gives personality and style to what lands in the glass.

Tech Sheet

100% Villard Blanc
ABV 13.62%
Fermentation Stainless Steel, Indigenous yeasts (10 days skin contact) - aged 6 months
Farming Methods Organic Certified

The 2021 Puech Auriol Orange is a skin-fermented expression of a local and not well known grape variety called Villard Blanc. The vineyard plot is on a terraced slope where almost every terrace is a slightly different composition of soil, ranging from sandy marl, to rolled pebbles, to oyster fossil filled limestone. This, along with the nature of the grape and the gorgeous fruit trees and forest that surround, lead to a very layered grape that has lovely acidity and texture, perfect for extended skin time. Once at the cellar, the fermentation takes place in tank (with 10 days of skin contact before pressing), and is then moved to 160L amphora, acacia wood, and a few used oak barrels for aging. After a paper filtration, the wine is bottled with a bit of sulfites and released to the market. Although fermented with skins, the color of the grape is not remarkably dark, so the wine shows a lovely golden hue versus an ‘orange’ look. But the layers it adds to the final wine is noticeable and full of great texture. A complex nose of spice, white fruit, and wildflowers leads to a very full palate backed with acidity, mineral, cedar, and white peach.

Puech Auriol is the name of the first hill that Stephane & Cecile bought grapes for Vila Voltaire.

Vila Voltaire is the small personal passion project of winemaking rock star Stéphane Yerle. Both grapes have large berries near harvest if the rains come, thus the wine’s name, from the extra swelling from the additional water. The grapes are harvested together and begin natural fermentation in stainless steel tank after bleeding about 40% of the juice off for rose, and to bring more concentration to this already light and juicy fresh red. Bio-protection is used, which is yeast that encourages healthy microorganisms to aid in the fermentation over bad bacteria and spoilage type yeasts, so that the entire process may be done without the use of sulfites, keeping the wine as exuberant and grape forward as possible. Olivier sources Merlot from a trusted farmer who has a plot of Grand Cru vines in St. Emilion specifically for this rosé. The grapes are hand-harvested before the sugars become too high and brought to the cellar for a natural start to fermentation in stainless steel. After only one day, the grapes are pressed, giving the wine a gorgeous kiss of color, and then moved into 6-year-old Allier 600-liter barrels to continue fermenting. The wood imparts interesting aromas and tannins to the finished wine, which completes its fermentation after approximately 15 days. The wine is never vintage dated, which is brilliant because good rosé should be enjoyed for a couple of years and not just immediately after harvest. Although it is always single vintage, there is no obsessing over its "correct" vintage. The aromatics are very pretty, full of soft berries, red plums, a hint of wood, and cherry cordial. Coming from only Cabernet Franc on clay and limestone soils, these 20+ year old vines are destined to share their existence in the bottle with the same fruit from each harvest, going through a true ‘Solera’ style process. Each year, the fruit averages 2-4 weeks on the skins during natural fermentation before pressing, which takes place in open, 500-liter barrels, that are punched down daily. Once pressed, the juice goes into French Tonneau (2-6 years old) barrels on top of the previous vintage’s remains that follow the yearly botting. This process, called soutirage, means that the wine was aged for at least a single year, as this is a bottling from 2020 where the 2011-2019 vintages were captured. The nose opens incredibly with a bit of time, showcasing licorice, olive, black cherry, and a touch of black pepper. Inspired by Burgundy, this wine is all about discovering the terroir of Bordeaux through Merlot; hand-harvest, no wood, only vats. The first ripe fruit comes in, destemmed and crushed, and begins fermentation. Once the rest of the crop has ripe stalks, the best fruit is selected to join in full clusters. 100% Carbonic ensues and when finished, is punched down to reveal this unique expression of Merlot to go and finish aging in tank. This grape that once thrived in Loire, now only represents a little over 2,000 hectares of land in the entire region, and hopefully it makes its rightfully owed comeback. The grapes were hand-harvested and destemmed and then went through alcoholic and malolactic fermentation in a concrete vat, with a gentle pressing after about 10 days. The wine settled at cold temperatures and rested for 3 months in stainless steel before it was bottled with a light filtration. This wine never saw any additions of sulfites, and is a raw and beautiful representation of this dark red-berried grape. The aromatics of the finished wine are mesmerizing, full of black fruits, sour cherry, bittering spices, and fresh herbs. In the mouth, the acidity is vibrant, accompanying the fresh fruit character and exciting spice, and giving texture where the tannins and alcohol do not. The range of wines is paired and dedicated to what their land grows best: Chenin Blanc, Cabernet Franc, Grolleau, Pinot Noir, and Cabernet Sauvignon.

Tech Sheet

//cdn.shopify.com/s/files/1/0727/8755/8673/files/BoisMoze_SONat_AnjouRouge_c2089b32-9e87-400e-9ce4-5437386e64a3.jpg?v=1752696389
santa-giustina-ortrugo-vivace-2023-750ml
Santa Giustina Ortrugo Vivace 2023 (750ml)

100% Ortrugo
Fermentation Stainless steel
Second Fermentation Charmat method, 20 days
Filter / Fining Light / None
ABV 11.75%
Farming Methods Sustainable, organic

Santa Giustina’s 2023 Ortrugo Vivace is a stunning bottling from the estate, offering a delightful white wine from a very native varietal. The grapes reach optimal ripeness in their organic vineyard before being hand-harvested and immediately brought into the cellar. The entire clusters are gently pressed, and then the grapes and must are left to rest at a low temperature for 18-24 hours together (Pellicular Maceration), before being completely pressed off the skins for fermentation in stainless steel. Coming from a 30-year-old vineyard of predominately Arneis, but with a bit of Favorita too, these grapes were hand-harvested and brought to the cellar for natural co-fermentation in concrete vats. After about 8 days of skin time, the grapes were pressed and put back in the vats to continue, as well as to complete malolactic fermentation. The wine rested there for 8 months, naturally clarifying and seeing no filtration before bottling. Only a touch of sulfites were used after malo and before bottling, resulting in a very expressive and raw version of the grapes. The nose is loaded with spicy aromatics, peach skin, and herbs, all leading to an incredible mouthfeel that has weight and structure, a kiss of tannin, and remarkable flavor. Acidity balances the wine out, complimenting the spicy nuance, ripe tree fruits, yellow apple, and kumquat, and lasting for a very long time, built to compliment an assortment of dishes at a table.

The ‘puppeteer’ image represents Emanuele (the winemaker) and his love for underground artistic projects, and his time on stage - he worked as a puppet master on television for fifteen years before committing himself fully to the family winery.

Buganza is a small family winery whose story began in 1978 in the rolling hills of Piobesi d’Alba in Piemonte, where Renato Buganza produced his very first Nebbiolo and Barbera d’Alba. He named every plant he ever found, and this wine is built in his honor - a bright and fresh representation of the Dolcetto grape, while remaining true to the structure and natural grip of this Italian variety.

Tech Sheet

//cdn.shopify.com/s/files/1/0727/8755/8673/files/redentore-prosecco-2021_a8c26dc0-0009-44e0-b990-6fae96a899bb.png?v=1715795582
gonc-60s-kerner-2024-750-ml-copy
Gönc '60's' Kerner 2024 (750 ml)

100% Kerner - Single Vineyard
Terroir Sandy to rich in marl with vines between 20-55 years old. It was first made with the intention to replace rosé (which was commonly drunk in the summer months), being able to utilize the lighter side of the local Primitivo grape. Being that rosé wines are a very important chilled beverage for the hot summertime in Apulia, originally this wine was cooled by placing the bottle (or cup) in cool water that was chilled with pieces of frozen snow from the “neviere” (a room dug out from rock, enclosed by thick stone walls, and filled with snow in the wintertime in order to create a ‘ice chest’ for the summer months). This wine comes from only the free-run must of the Racemi, which is the juice of the second budding fruit of the Gioia del Colle Primitivo plant (yielding only 1200-1880 kg/hectare), which has less of a full-body character, a more delicate palate, and a lovely sweet and floral smell. The Teres is a fresh, mineral driven light red wine full of strawberry, cranberry, raspberry, red currant and a green almond aftertaste with a mineral driven backbone and light balsamic notes.

Filipo Petrera lived until the age of 98, and each morning for breakfast he had a half-liter of fresh milk and a half-liter of Primitivo

Azienda Agricola Petrera Pasquale has been making wine in the Gioia del Colle region since the late 1800’s. Like many wineries in the area, bottling wine came very late to the game, and 5 generations later, the first bottles of ‘Fatalone’ were produced in 1987. A winery with intense dedication to the earth, their certified organic farming practices prove to make exceptional Primitivo Gioia del Colle in three different tiers, and one bianco made from the local Greco. It is not so farfetched to learn that the oak aged wine is accompanied by calm music, when tasting the light yet serious wines from this house, as only one of the several biodynamic philosophies that Pasquale practices at the estate. Only stainless steel is used for fermentations in all of the wines, and when oak is used, it is always large and very old Slavonian oak. Sulfites are not used during vinification, and only a minimum but stabilizing amount is used at bottling, leading to a purity of fruit, earth, and elegance that can only be experienced on the tongue. These wines surely compete with some of the greatest wines of Italy, and are serious enough to be drank for years and years to come.

Tech Sheet

//cdn.shopify.com/s/files/1/0727/8755/8673/files/Fatalone-Terres_bb874cf4-139b-4652-8c3e-43a09bbc4294.webp?v=1755094905
redentore-refosco-2022-750-ml-copy
Redentore Refosco, Della Venezie 2022 (750 ml)

100% Refosco
Fermentation Stainless steel, Indigenous yeast ferment
Aging 12 months
Filter None
ABV 13.5%
Farming Methods Organic, Single Guyot

The 2022 Redentore Refosco dal Peduncolo Rosso comes from the ‘second label’ of the De Stefani estate. In 1971, Tiziano De Stefani (Alessandro’s father), moved his family to the Fossalta di Piave where they could grow many different grapes on the clay soils of the old river plain, while retaining their esteemed Glera vineyards for Prosecco production. With a complete dedication to as natural production as possible, the estate is organically farmed, they only rely on naturally occurring yeasts as well as never adding sulfur during vinification (since 2009), all while focusing on many varietals that they have found to create incredible results in their unique terrain.
