At the cellar's helm, visionary head winemaker Fadi Batarseh has profoundly reshaped the region's viticulture by conducting groundbreaking genetic research to identify and rescue ancient, indigenous Palestinian grape varieties. Marking a new chapter in this deep-rooted history, Batarseh introduces the Al-Jather indigenous natural wine series—Cremisan’s very first foray into the natural wine category.\u003cbr\u003e\u003cbr\u003e\u003cem\u003eAl-Jather white\u003c\/em\u003e is produced by grapes purchased from local farmers in the Bethlehem and Hebron regions of Palestine. The grapes are hand-harvested during the coolest hours of the day to protect their delicate varietal aromas, de-stemmed and soft pressed into stainless steel. The juice is then vinified with native yeasts and without added sulfites.
