A traditional blend of Macabeo, Xarello & Parellada with the second fermentation occurring in bottle (aka Methode Champenoise) incorporating at least 18 months of additional aging to produce super fine, plush bubbles. Flavors and aromas of citrus peel, almond, apple and peach blossom, mineral, green apple, and stone fruit. No added dosage, so it's beautifully dry. Try it with tempura or fried chicken, traditional pairings like Jamón or seafood, or just kick back with some truffle popcorn. Organically-grown, and low added sulfites.
