We’ve been searching for years to find a high quality sparkling sake. The category seems either cheaply made and too sweet or dry and lacking flavor. This is different! Pours an iridescent silver-green color with suspended microfine particles from the in bottle fermentation. Smells of white peach. On the palate, there’s lychee and mangosteen transitioning to dried mango on the finish. Mousse is fine, persistent and robust.
SERVING
OPEN CAREFULLY! Twist open, close, repeat. Bubbles as aperitif of course but this will pair with the entire meal.
BREWERY
This tiny brewery hidden in the mountains of Tokushima is in the 17th generation family house. While the region is steeped in tradition of Awa dancers and samurai, Mamiya san and his three daughters cultivate their own style of sake. They use local rice, much of it ungraded and a house yeast for a unique taste. Check out their many music collaborations.
